The Brădet dairy

The

Brădet Dairy

From the foothills of the Făgăraș Mountains, since 2005

A modern plant

and a tradition

The Brădet dairy stands in the village of Brădet, Argeș County, at the foot of the Făgăraș Mountains — on the historic ground where the renowned Brădet cheese was made.

In its present form the dairy is the result of a total rebuild carried out between 2003 and 2005, followed by a complete restoration after the 2008 fire. From 2010 we ran a large modernisation programme with European funding worth 3.5 million euros, fitting the plant with modern processing, quality-control and packaging equipment. Between 2020 and 2025 a further 2.3 million euros were invested.

The philosophy behind every stage of that modernisation is a clear one: technology helps us where hygiene, food safety and efficiency are concerned — never where taste is. All the traditional recipes, above all that of Brădet Cheese, are applied today exactly as we inherited them.

We support

Romanian farmers

The raw material for every Brădet product is Romanian milk. We use no milk powder and no reconstituted milk.
We work with partner farms in Argeș and the neighbouring counties, which supply us with two kinds of milk:

  • Cow's milk — the basis of most of the portfolio: matured cheese, soft cheeses, sour cream, yoghurt, butter and drinking milk
  • Goat's milk — the basis of a dedicated range with a nutritional profile of its own

Many of our relationships with farmers are long ones, in which trust was built over years. We know the farms, the conditions the animals are kept in and the quality standards of every partner.

The milk is chilled immediately after collection and carried to the dairy in dedicated refrigerated tankers that hold the temperature steady the whole way. That short, controlled chain — farm, tanker, dairy, all in the same day — is why our products have the freshness you have come to expect.

Tradition takes shape

through modern technology

The process by which Romanian milk becomes the Brădet product you find on the shelf follows a strict, repeatable route, controlled at every stage.

  • 1. Intake and testing on arrival Every tanker is tested in our own laboratory: fat, protein, microbial load, integrity. Milk that fails to meet the standards is refused, without exception.
  • 2. Pasteurisation Approved milk is pasteurised at carefully calibrated temperatures that remove any pathogens while preserving the natural taste and nutritional value.
  • 3. Processing to traditional recipes Brădet Cheese is made to the inherited recipe, with no ingredients that were not in the original formula. The same goes for the brined cheese, the cow's cheese, the butter, the sour cream and the yoghurts — no stabilisers, no milk powder, no added flavourings, no chemical thickeners.
  • 4. Maturing Our cheeses mature for exactly as many days as the recipe asks, and not one fewer. We do not hurry the milk. That patience is half the difference between a natural product and an industrial one.
  • 5. Packaging and distribution Finished products are packed under controlled conditions, in safe packaging that keeps them fresh all the way along the distribution chain.

Quality and

food safety

For us quality is not a marketing promise — it is a procedure. And the only way to guarantee it is to check it systematically, at every stage.

  • Our own laboratory The Brădet dairy has its own testing laboratory, where qualified staff check both raw material and finished products daily. Every batch of milk is tested on intake. Every batch of finished product is checked before it leaves the dairy.
  • Independent testing, at home and abroad Besides our internal checks, our products are tested periodically by independent laboratories in Romania and in the European Union — in Italy and Germany, among others. In 2016 Brădet products were also analysed by the Cantacuzino Institute, and the results confirmed full compliance with food-safety standards.
  • Traceability and transparency For every batch of finished product we can trace the whole route backwards: the farms it came from, the test results, the processing stages and the packing date. Test reports and the results of independent analyses are published on our site, open to anyone.

Because when it comes to food, transparency is the most honest form of respect towards the people who choose us.
